In a hurry and trying to make a meal that’s somehow yummy, not terrible for you, and won’t break the bank? We’ve got you.

 

Here are five cheap and easy meals courtesy of Delish.com.

 

Meal 1. Cobb Salad

 

Many of you already know the wonders of the Cobb salad but for the uninitiated, here’s the recipe. Take a base of romaine lettuce and top with diced chicken breast, halved cherry tomatoes, a sliced avocado, some crumbled bacon, and, of course, quartered hard-boiled eggs. Drizzle with a light dressing of oil, vinegar, and Dijon. Toss and enjoy. It’s incredibly easy, light enough it won’t weigh you down, and hearty enough to fill you up.

 

Meal 2. Lemon Garlic Shrimp

 

Shrimp is the gateway seafood. Even those who don’t enjoy fish can often get on board with shrimp. One easy way to prepare them is to cook them in butter and olive oil alongside crushed red pepper and garlic. After they turn pink, stir in some lemon juice, parsley, a little extra butter, and a bit of water (or try white wine for added taste).

 

Meal 3. Chicken Salad

 

Mix diced chicken breasts, chopped apple, chopped red onion, and chopped celery. Mix mayo, Dijon mustard, red wine vinegar, salt, and pepper. Combine the two mixtures and boom, chicken salad. It can be eaten directly, put on sandwich, eaten as a dip, and tastes great as leftovers.

 

Meal 4. Baked Salmon

 

Baking salmon is so much easier than it seems. Lay down some foil and create a bed of lemon slices. Season a piece of salmon with salt and pepper and place it on the lemons. Mix together butter, honey, garlic, thyme, and oregano (or change the glaze to anything you’d like). Pour that over the salmon, fold over the foil, and bake for about 12-15 minutes. Done.

 

Meal 5: Caprese Zoodles

 

Cut zucchini into long strips, toss with olive oil, salt and pepper. Add in some tomatoes, mozzarella, and basil. Drizzle with some balsamic vinegar and voila, a meal that’s more than a salad.
